Hand sharpening is performed using Japanese waterstones.
Powered sharpening is performed using a cool running belt sander.
All work is done free hand, to suit the need of each individual knife.

Powered Sharpening (pricing per blade inch)
Japanese Western Small Bevels - $3 These knives are the common Japanese knives seen - the gyuto, nakiri, santoku, sujihiki, petty, etc. They have small bevels typically around 1-2mm in height. These knives can be powered sharpened but only by using cool running belts and extensive experience by the sharpener. If done correctly the material loss is no greater than hand sharpening with no risk to edge holding or heat treatment.
Euro / US Style - $1.50 These knives are mostly going to be the typical chef's knives we see in the US made by companies like Dexter Russell, Henckels, Wusthof, etc.
Note- a santoku made by a German company is a German knife - not Japanese
Meat/Bone Cleaver - $5.50 
Japanese Western Wide Bevels (belt finished - no kasumi) - $10 These knives have wide bevels that continue from the blade edge up to 20-40mm (ish) onto the blade's face. These knives can be powered sharpened but only by using cool running belts and extensive experience by the sharpener. If done correctly the material loss is no greater than hand sharpening with no risk to edge holding or heat treatment. The finish provided from belt sharpening is considered to be not as attractive as what can be accomplished by using waterstones however the labor involved is significantly less and the cost savings to the customer reflects this option.
*Note - many wide beveled knives require bevel flattening the first time they're sharpened - additional charges may apply if this service is required. 

Hand Sharpening (pricing per blade inch)
Japanese Western Small Bevels - $5.50 These knives are the common Japanese knives seen - the gyuto, nakiri, santoku, sujihiki, petty, etc. Sharpening these knives by hand on waterstones is not required yet many customers prefer this level of service. 
Japanese Western Wide Bevels (functional & attractive bevels, kasumi, etc) - $25 These wide beveled knives can be made to look very nice using waterstones. Sharpening these knives in this manner brings out the best the knife has to offer in both appearance and function. It also provides a bevel that the user can work with easily to sharpen the knife themselves. These knives often require bevel flattening the first time they're sharpened, this is extra labor/expense, yet it is included in the price of this level of service. *No additional repairs (edge nicks, etc) are included.
Japanese Traditional Single Bevel - $25 The traditional Japanese knife - the yanagiba, usuba, deba, etc. These knives can only be sharpened correctly using waterstones. These knives will be sharpened to the max for performance and appearance. These knives often require bevel flattening the first time they're sharpened, this is extra labor/expense, yet it is included in the price of this level of service.*No additional repairs are included. 
Honyaki - +25%  Honyaki knives are single steel constructed and VERY hard. They are purchased because of increased edge holding abilities. These attributes provide for increased difficulty in sharpening and repair, thus the reason for the extra charge for these knives. 
*Shun, Global, MAC, Henckels Twin Cermax/Miyabi, Tojiro Zen, any factory made knife, Chinese made vegetable cleavers, & Aritsugu knives Shall Not be hand sharpened.
Powered sharpening only will be supplied for these knives
 
Repairs/Modifications
Edge Nicks / Chips - $10+ 
Tip Repair (small) - $8-$10
Tip Repair (large) - $20-$40
Reprofile - $40+
Buffing/Polishing Blade and/or Handle - Not Available
Refinish Handle - Not Available
Refinish and/or Thin Blade - $150 (belt finish), $225 (hand applied and/or damascus refinish) 
*Note - not all blades can be refinished or thinned - please inquire as to your specific blade
 
Turnaround Times (from receipt)
Powered Sharpening (plus edge nicks/tips/reprofiles) - 4-6 days
Hand Sharpening - 6-10 days
Refinish/Thin Blade - 6-10 days

Please read our Sharpening Service Mail Order Terms before shipping tools to us for sharpening. By sending your tools to us you are agreeing to these terms and are responsible for any additional costs that may apply due to necessary repairs and/or parts replacement.

We DO NOT accept personal checks.

Credit card payments can be made through Paypal without opening a Paypal account or made directly through us by phone or email.

If paying by Paypal simply send the knives to us including the (filled out) order form and we will send you an invoice once the work is complete.

We DO NOT offer walk-in/drop off service - mail order only.

Return shipping costs and insurance (if requested) are the responsibility of the customer. 

Return shipping insurance will only be provided per customer request and only for the amount of coverage declared.
